Michelin craftsmanship above the clouds
When Michelin-level precision meets the challenges of in-flight dining, the result is a truly distinctive experience. This is exactly what the new edition of “Michelin Star Flavours in LOT Business Class” delivers, created by Artur Skotarczyk, head chef of Poznań’s Michelin-starred Muga restaurant.
Following the success of the first edition, Polskie Linie Lotnicze LOT continues the project, reinforcing its commitment to premium travel experiences that go beyond comfort and service. Skotarczyk’s menu is available to Business Class passengers on selected long-haul flights departing from Warsaw.
A refined menu at cruising altitude
The Business Class Fine Dining Menu allows passengers to pre-select one of four main courses, each reflecting the chef’s culinary philosophy: top-quality ingredients, technical mastery and a contemporary take on classic flavours.
The menu features:

Label Rouge Salmon with saffron – silky confit salmon with glazed carrots, saffron beurre blanc and a rich mussel butter sauce finished with caviar.

Beef with Gratin Dauphinois – slow-braised beef shoulder served with creamy potato gratin, black lentils with chorizo and a wine-based sauce.

Guinea fowl “Coq au Vin” – tender guinea fowl with truffled celeriac purée, glazed onions and pancetta in an aromatic sauce.

Hokkaido pumpkin gnocchi – a vegetarian option with pear in port wine, chestnuts in brown butter, walnut dressing and fresh stracciatella.
– My goal was to transfer the flavours and experiences I have been building for years into the unique environment of an aircraft cabin, without sacrificing quality or authenticity – says Artur Skotarczyk.
Cuisine as a cultural showcase
The project is carried out in cooperation with the Polska Organizacja Turystyczna, highlighting cuisine as a powerful tool for promoting Poland abroad. Featuring a Michelin-starred chef’s menu on board the national carrier sends a clear message: Poland belongs to the global culinary elite.
Artur Skotarczyk’s menu will be available from 1 February to 31 July 2026 on selected long-haul LOT Business Class flights, with dishes to be ordered at least 24 hours prior to departure.
