After several years’ break, the Gault&Millau culinary guide has returned to Poland. The latest edition highlights 251 restaurants across the country, including 17 in Poznań and the surrounding area. The guide is an important reference for the gastronomy industry and a helpful guide for food lovers.

Gault&Millau is one of the most recognizable culinary guides in the world. It was created in France in the 1960s by journalists Henri Gault and Christian Millau, who aimed to promote modern cuisine and recognize restaurants focusing on high-quality ingredients, culinary technique and the personal style of chefs.

The ratings in the guide are based on a 1-20 point scale. Restaurants that receive at least 11 points are also marked with the characteristic chef’s hat symbols (French: toques). Establishments can receive from one to a maximum of five white toques. A particularly rare distinction is five yellow or gold toques, symbolizing absolute excellence.


Inspectors visit restaurants anonymously. During their evaluations they consider, among other things, flavor, ingredient quality, cooking techniques and creativity in the kitchen. The level of service - professional, attentive and engaged - is also an important factor. Because of its high standards, the guide is an important distinction for restaurateurs and a helpful reference for guests exploring the country’s culinary scene.

In Poland, the first edition of the guide was published in 2014, with new editions released annually until 2019. The project was then suspended and the guide was not published for several years. After this break, it has returned to the Polish market - with a new editorial team and new inspectors - releasing the 2026 edition
